Sukuma Wiki with beef & ugali

If you are a ‘true Kenyan’ you should have had Ugali at least once.

Serves 4

  • 3 bunches of Sukuma wiki (sliced finely)
  • 200g lean beef shredded
  • 10g onions 
  • 5g garlic
  • 5g red bell pepper stripes
  • 2 or 3 Royco beef cubes
  • 2 knobs butter 
  • 3 tablespoons vegetable oil, salt & pepper to taste  

Preparation

  1. Let the onions and garlic get brown in the pan
  2. Add the shredded beef and let it colour slightly
  3. Add the Royco beef cubes and red bell pepper stripes
  4. Add the sukuma wiki and stir in well
  5. Cook for 10-15 minutes and finish with the butter to give a glossy appearance
  6. Serve with Ugali
